Happy Anniversary to my Favorite Guy!

A very Happy 4th Anniversary to Felipe - the wonderful man I get to wake up next to each morning, and cuddle with each night. It makes me smile thinking how fast time flies and that it's been four whole years since we were married in the garden at St. Mark's, and I am so grateful for every day.

We're looking forward to celebrating another marriage next week - when Felipe's sister gets married!!! I guess autumn is just the best time of year for that sort of thing ;)

In Memory

In honor and memory of the 10th anniversary of the attacks on the World Trade Center. It's overwhelming to think how many people died on that fateful morning, and how many people mourn their passing. Having lived here in New York City for the past six years, it's easy to imagine that any of those people could have been one of my friends or coworkers. I hope that all may take this as a day to remember how important it is that we put forth kindness in our daily lives, that we help and serve others and not just ourselves, as our life on earth may be short and you never know how much time you have to make a positive impact on the future....

New Recipe: Cheddar Chive Bacon Biscuits

Cheddar Chive Bacon Biscuits

This week we did another one of our tiny potlucks at work and rather than lunch like we usually do we decided to do breakfast.  So I made the Cheddar Chive Bacon biscuits and they turned out quite yummy!  I got the recipe off of epicurious.com and it says it appeared in Bon Appetit in February 2010.


Cheddar, Bacon, and Fresh Chive Biscuits

Yield: 12
Active Time: 25 Minutes
Total Time: 55 minutes

Ingredients:
6 Thick cut bacon slices
3 3/4 cups flour
1 1/2 tablespoons baking powder
1 1/2 teaspoons baking soda
1 1/4 teaspoons salt
1/2 cup (1 stick) chilled unsalted butter cut into 1/2 inch cubes
2 1/2 cups coarsely grated sharp cheddar (about 12 ounces)
1/3 cup chopped fresh chives
1 3/4 cup buttermilk


Preheat oven to 425 degrees.  Line a heavy baking sheet with parchment paper.  cook bacon in a heavy large skillet over medium heat until crisp and brown.  transfer bacon to paper towels to drain, then chop coarsely.


Combine flour, baking powder, baking soda, and salt.  Add butter cubes and mix in with a pastry cutter until a coarse meal forms.  Add cheddar cheese, fresh chives and chopped bacon - toss to blend.  Gradually add buttermilk, stirring to moisten evenly.  Batter will feel sticky.


Using lightly floured hands, drop generous 1/2 cup batter for each biscuit onto prepared baking sheet, spacing batter mounds about 2 inches apart.  


Bake biscuits until golden and tester inserted in the middle comes out clean, about 18-20 minutes.   Let cool 10 minutes and serve biscuits warm or at room temperature.
